Red Beans and Rice
Ingredients
1 Garlic Clove, peeled, finely chopped
Rice, long grain, cooked, 3 cups or try Brown rice for a healthier option
Sofrita, Goya brand, 3 tablespoons
Dry red beans, 8 ounces
Water, 3 cups
Onions, raw, browned, peeled, large piece 4 ounces
Salt 1 1/2 teaspoons
Olive Oil 2 tablespoons
Onions, raw, browned, peeled, small dice 4 ounces
Directions
Together: Sort and wash beans under cold water.
Together: Soak 8 ounces of beans with 3 cups of water overnight in a large pot.
Adults: Peel onion and cut a large 4 ounce piece.
Adults: To cook: add onion (the large piece to be removed later), cover and simmer for 2 hours until beans are tender. Add water if needed. Add salt.
Adults: Simmer an additional 10 minutes. Remove onion.
Adults: In a sauté pan, over medium-high flame, heat olive oil.
Adults: Peel the garlic clove. Dice garlic and finely slice remaining 4 ounce onion.
Adults: Add onions and garlic until golden brown.
Adults: Add beans with a slotted spoon, minimizing the amount of liquid.
Adults: Add cooked rice, and sofrita, stir well. Cook for 7-10 minutes until all liquid is absorbed. Makes 6 cups.
Turkey-Potato Dinner Wraps
Ingredients
Tomato Sauce 1 can (8 ounces)
Sour Cream, Reduced Fat, (optional)
Cheddar Cheese, shredded 2/3 cup
Dried Italian herb Seasoning or basil 1 teaspoon
Salt and Pepper, to taste
Potatoes, cut into 1/2-inch diced 3/4 pound
Water 1 tablespoon
Canola oil 1 tablespoon
Ground Turkey, 99% fat free 3/4 pound
Carrots, shredded 1 large
Whole wheat or high fiber tortillas, 4 large (9-10 inches)
Green Onions, sliced with tops 1/3 cup
Directions
Together: Place potatoes in microwave-safe bowl; sprinkle with water. Cover, venting one corner.
Adults: Microwave on HIGH 5 to 8 minutes just until potatoes are tender. (Time will depend on wattage of your oven.)
Adults: Meanwhile, heat oil in large nonstick skillet over medium-high heat.
Adults: Add and break up turkey; cook 5 minutes, tossing occasionally.
Adults: Mix in carrot; cook 2 minutes.
Adults: Add potatoes and onions; cook and toss 2 minutes.
Adults: Reduce heat to medium; mix in tomato sauce, cheese, and herbs. Cook, stirring occasionally, 4 to 5 minutes until mixture is hot and most of sauce is absorbed. Season with salt and pepper.
Kids: On work surface, lay out tortillas.
Together: Place 1 cup hot turkey mixture on each; fold and roll up as for burritos.
Together: Cut in halves and place on serving plates. Accompany with sour cream, if desired.
