Carrot Rice Pilaf
Serves 4 to 6 as a side dish

Ingredients
1½ cups basmati rice
2 tablespoons butter
¾ cup peeled and grated carrot
3½ cups water
1 inch cinnamon stick
½ teaspoon salt

Instructions
Put the rice into a bowl with some cool water. Swirl the rice around and then drain the rice. Repeat this process 2 or 3 times, until the water is clear.

In a saucepan, melt the butter over medium-high heat. Add the rice and grated carrots and sauté for 2 minutes.

Add 3½ cups water, the cinnamon stick, and salt. Bring to a boil. Boil, uncovered, for 2 minutes. Reduce the heat to medium-low and cover.

Cook the rice for about 20 minutes, until all of the liquid has been absorbed. Remove from heat. Let the rice rest for 10 minutes before serving.

Homemade Hummus
Kids really love to mash, so no need to use a food processor when making hummus! Enjoy as a dip for your favorite vegetables or pita chips.

Ingredients
1 (15-ounce) can garbanzo beans, drained and rinsed
1 garlic clove, minced
1 tablespoon tahini, optional
3 tablespoons olive oil
3 tablespoons fresh lemon juice
¼ cup water
½ teaspoon salt
¼ teaspoon ground cumin

Instructions
In a bowl, use a potato masher to mash the garbanzo beans until they are almost smooth.

Stir in the remaining ingredients and mix until well combined.

Watermelon Salsa
Makes about 3 cups

Ingredients
3 cups seeded watermelon cubes
3 tablespoons lime juice
½ teaspoon salt
Pinch of black pepper
2 tablespoons chopped fresh basil
1 jalapeño, diced

Instructions
Place all ingredients in a bowl and stir only until well combined.

Serve with tortilla chips and enjoy!
