How a Greece Mom Built a Luxury Dessert Brand from Mini Pancakes

What began as a simple idea – serving fresh mini pancakes at local community events – has grown into one of the area’s most recognizable woman-owned dessert brands.

NY Sugar Art began right here in Greece, with a small cart, a big dream, and a desire to create something original. Founder Heidi Cappon (local mom of two) wasn’t looking to start just another food truck; she wanted to build an experience.

Her first events included beloved local staples like Bands at Barnard and small-town pop-ups. The response was immediate. The concept was different: warm, made-to-order mini pancakes presented beautifully, paired with colorful toppings and thoughtfully curated details. It wasn’t just dessert; it felt special.

 “I always believed pretty things taste better,” Cappon says with a smile. “I wanted people to feel excited when they walked up. I wanted it to feel special.”

As word spread, so did the vision. The mini pancake cart expanded into waffle pops, walking cannoli attendants (where cannoli are piped fresh on demand at weddings and events), and a custom line of vibrant boba lemonade refreshers that quickly became festival favorites.

Each addition carried the same signature: playful luxury with a welcoming, hometown feel. Building a business in the mobile food industry – an often male-dominated space – required resilience. From hauling equipment to navigating event logistics, Cappon learned every aspect of the industry hands-on. But she leaned into what made her different: attention to detail, branding, and a genuine love for creating moments people remember.

At the same time, she balanced growing the business while raising her children, often bringing them along to events and teaching them what it looks like to build something from the ground up.

As NY Sugar Art continued to grow, opportunities expanded beyond Monroe County and into Manhattan, collaborating with high-end brands and bringing a touch of the local Greece charm to large-scale city events.

But no matter how far the cart travels, Cappon says her roots remain at the center of everything.  “This community believed in me first. That means everything.”

Today, NY Sugar Art is more than a food truck; it’s a reminder that big dreams can grow from small beginnings. From local concerts to Manhattan collaborations, the heart behind it all is still the same: creating joy, one sweet moment at a time.
